Macadamia Kernel is our core business and we lead the world in quality. Because we are owned by growers we are guaranteed substantial quantities of in-shell for processing every year which enables us to commit large quantities of kernel to our customers and meet their expectations every time. It also enables us to implement on-farm quality systems that ensure our macadamias are wholesome and fresh when they get to the consumer. We are also able to supply substantial quantities of a much wider range of kernel sizes than any other macadamia processor, a factor that is important to many of our customers

Nut Style - 0 - Super Premium Wholes

This kernel style is scarce. Representing only a small proportion of the kernel we produce, Style 0 is coveted by connoisseurs around the world at a premium price. The product consists of very large kernels which range from 21 mm upwards.

Style 0 comprises no less than 98% large, whole kernel, carefully screened to ensure consistency of colour, texture and size.

Style 0, whole kernel is perfect for premium gourmet snacks, served raw, dry roasted, oil roasted and salted.

Nut Style - 1 - Premium Wholes

Style 1 is the most sought after style of whole kernel after Style 0. Style 1 presents well in premium snack mixes and chocolates where the consumer requires whole kernel. Style 1 consists of a minimum 95 % whole kernel with a size range of 19-21mm.

Style 1 is often purchased by re-packers who blend premium wholes with halves to meet the demands of specific market segments.

Applications & uses

Style 1 is most adaptable. It is primarily used in premium snack packs blended with halves.

Style 1 is also widely used as a gourmet table nut...more upmarket than most other nuts.

Nut Style - 2 - Premium Wholes and Halves

The traditional "Wholes and Halves" range, Style 2 is a 50/50 mixture of whole kernel and large pieces ranging in size from 15-19mm. Style 2 has a wide variety of applications of which the most popular is snack.

Either dry roasted or oil roasted and salted, Style 2 macadamias are best suited for retail packs or sold loose as snacks.

Nut Style - 3 - Premium Mix

Style 3 should be considered when a lower priced alternative to Style 2 for snack applications is needed and a lower percentage of whole kernels is acceptable. At least 15%, by weight, of Style 3 pieces are whole kernel and almost all are half kernels or larger, with an average size larger than 15 mm.

Nut Style - 4 - Halves

Style 4 constitutes around 45% of macadamia kernel produced and it is the most economically priced style available.

Within the Style 4 category we produce 3 main sub-styles: Large (4L - 0-15% whole kernel with the remainder halves and large chunks held on a 15mm screen).

Medium (4M - at least 80% halves and large chunks held on a 14mm screen).

Style 4 - 80% half kernel and chunks. Kernel passes through a 14mm round mesh screen and is held on a 12mm screen.

Applications & uses

Whether raw or roasted, Style 4 can be mixed with or added to a wide range of products. Excellent for use as a bakery ingredient, or to create economically priced retail snack packs.

Nut Style - 5 - Premium Large Chips

This style is naturally occurring large chip produced through a special screening process. Kernel passes through a 12mm round mesh and is held on a 9.5 round mesh. Chip size is typically between 9 and 12 mm.

Nut Style - 6 - Premium Chips

Style 6 occurs as a "natural chip" or is manufactured as a diced product to suit customer requirements.

Despite the small particle size, Style 6 can be dry roasted or oil roasted without a high loss factor.

As an ingredient, Style 6 is most suited for ice cream, cookies, pies and pastries.

Nut Style - 7 - Premium Small Chips

This style of "small" chip is both naturally occuring and also manufactured as a diced product. Kernel passes through a 6mm square mesh and is held on a 5mm round mesh.

Applications & uses

Style 7 macadamias have a multitude of uses: macadamia sprinkles for toppings, for fine food preparation in restaurants and hotels, for addition to cereals or muesli and as a basic ingredient for nut breads, cakes, pies and pastries.

The most popular application for Style 7 is in the commercial production of packaged cookies and biscuits.

Macadamia Paste

Macadamia paste is a new addition to our family of fine products. Created from roasted kernel it is ideally suited to applications in ice cream, confectionery soft centres and bakery products. Macadamia paste is also available for application in savoury products like satay sauces and pestos. With a shelf life of 12 months from production this product is dry roasted and milled to customer specifications.

Macadamia Oil

The flavour of macadamia oil is clean, intense and rich. Macadamia oil has one of the highest levels of monunsaturated fats of any tree nut oil and contains no cholesterol. It is arguably one of the most versatile oils available for food service applications yet remains little known due more to the popularity and abundance of other vegetable oils.

Refined macadamia oil is a popular ingredient in cosmetics where the natural anti-oxidant qualities of the oil and high levels of palmitoleic acid make it ideal for application to the skin. Macadamia oil contains approximately 60% oleic acid, 17% palmitoleic acid, 2% linoleic acid and 1% linolenic acid. It also contains 3% omega-6 and 3% omega-3.

Macadamia oil's rich, cushiony skin feel, high oxidative stability and high palmitoleic content make it especially suitable for medicated creams and suncare formulations. Derivative of Macadamia oil in cosmetics include the light emollient Ethyl Macadamiate and water soluble PEG-16 Macadamia Glycerides.

Suggestions for Roasting

Macadamia Kernel may be roasted and salted to suit the requirements of the finished product. It is essential to ensure that kernels are roasted SLOWLY and EVENLY. High temperatures and/or excessive time will darken kernel to unacceptable levels. It must be noted that macadamias will continue to cook until they are cooled. This may be for 10-20 minutes after they have been removed from the roaster. Roasted macadamias should not be placed into packaging until they have cooled to room temperature.

Suggestions for Dry Roasting

Continous conveyor style roasters which include fan forced roasting chambers and cooling sections are routinely used for macadamias. Some processors also use tray ovens to roast smaller volumes or coated products that are fragile.

Roasting temperatures and time will vary depending on the size of kernel being roasted, the degree of colour and flavour required for the finished product and the individual oven being used. We recommend that you start with a shallow bed depth (1 or 2 layers of kernel) at 150 degrees C for 10 minutes followed by immediate cooling. If required, salting should be carried out during the cooling period, soon after the kernels have passed from the roasting chamber, to ensure adequate adherence.

Suggestions for Oil Roasting

Best results are obtained by using canola or cottonseed oil. As for dry roasting, temperature of the oil bath and time for immersion of the kernel will vary depending on the desired level of roast and colour. Following the roasting process, excess oil should be removed from the nut surfaces. If required, salting should be carried out during the cooling period, soon after the kernel has been removed from the roaster or fryer, to ensure adequate adherence.
